Tuna Ronqueo
The "Ronqueo" is a traditional Spanish artisanal butchery and filleting ceremony for whole bluefin tuna. Named after the "snoring" sound the knife makes as it scrapes along the fish's spine, the process takes immense skill to yield up to 24 distinct cuts with zero waste.
